So this is Christmas….

And I’m not cooking….. much.   Ok, so that’s not true, and the grocery bills from Coles today will attest to that!

Traditionally, because Thanksgiving is such a big deal to me, I like to sit back, relax and let someone else deal with Christmas.  It’s not that I’m a Scrooge, but I’m just not that good at backing up two months in a row with turkey and all the trimmings…  After the effort of thanksgiving, Christmas is a bit of a let down—and I don’t just mean my Kris Kringle present this year.  It’s just anti-climactic for me, I guess I’m at that weird age in between being a kid and having one where Christmas is just isn’t all that important as holidays go.   Add to that the recent loss of a parent and it’s pretty easy to see why Christmas is hard to get excited about…

Although, I will say that I’m pretty excited about my godson.  He’s new.  It’s my first Christmas as a Godmother, and I think it’s fair to say that someone’s getting spoiled this year!  Too bad, he won’t remember any of it!  But I am excited that we’re spending Christmas Eve and morning with him, not only will it be great to have a kid filled Christmas, but it also means I’m almost off the hook for making a turkey or ham.  YAY!  The Runner and I are having a small seafood Christmas lunch here­- and if you know me, you know that there is no such thing as “small” when it comes to entertaining.  Somehow I’m managed to transform prawns and oysters for three into prawns, oysters, scallops, tuna, 3 different salads, two different desserts, preparations starting 48hours in advance.   Yes, say it with me…..Glutton.For.Punishment.  Yes, everyone roll your eyes together, because yes, I too can see how this will end.  Needless to say, you’re invited for leftovers on Boxing/St. Stephens Day.

So, on Christmas Eve Eve, I’m starting the baking- not for me though.  We’re going carolling or something like that and I’m making the Heaven Cake (again!) from Spoonbread and Strawberry Wine.  It’s weird that it’s now my favourite cake to bake—and yes it is super easy which could be why it’s a favourite.   Stay tuned!
