I have found a new best cookie in the world, and it is the tiramisu cookie from Justine Snacks that I made this week. Kudos to Dylan from Jungle Botany for suggesting the wacky, wild idea of a tiramisu cookie, and kudos to the Justine Snacks’ recipe that I found online for making it happen!

Now, I was a bit sceptical at first because I thought tiramisu? in a cookie form? No, thank you, but these are next level, possibly the best cookies I’ve ever eaten and probably the best cookies I’ve ever made! I thought they were pretty good when I tasted them, but the reactions were next level. MULTIPLE people said they were the best cookie they’ve EVER HAD!

The recipe itself is pretty simple. They don’t look in any way like tiramisu the dessert. The recipe didn’t require any stuffing or any complicated rolling in dough, which was probably why they were actually a delight to make. It just required coffee grounds, which I have because I love coffee; rum, which I have because I love rum, and mascarpone cheese, which I didn’t have but got at the grocery store. All in all, it was pretty easy, and the flavour payoff is amazing. You get the coffee kick, you get the rum spice, and get this weird creamy but nice flavour from the mascarpone cheese. It also has chocolate shards, so to be honest, it could be the perfect cookie!

The other cookie I made this week was peanut butter and miso from the NY Times Cookies book. Again, shout out to Fed, my trainer at Jungle Botany and Pole sister, for asking for a peanut butter cookie this week. It was good, not next-level tiramisu good, but still pretty good.

Did you know that tiramisu in Italian means “pick me up”? It does, and these cookies were the perfect pick-me-up this week! 

I actually don’t know what I’m going to do to top them for this week because they were pretty much next level. I mean, I could just bake the Tiramisu ones every week and people would be thrilled. I’m going to dive into Justine’s recipe box to see what other treasures it holds over the next few weeks. This week, I will do chocolate mint cookies (I’ve been meaning to make them for a while) and these Craisin Frosted Flake Cookies , which sound quite bonkers but could be really good– or really bad! No matter what it is, it’s going to be hard to beat the amazing flavour of tiramisu from this week!
